It’s most certainly possible. You’ll need some additional hardware in the form of 2 x 74HC595 shift registers, a 6N137 optocouplee, 8 more LEDs, along with another MIDI din, and a handful of resistors and a diode.
Find all the details in the Fritzing design file available here. This time, I didn’t lay the design out in the breadboard view, but you should be able to get all the info you need from the schematic view.

Finally, upload the RED’s firmware to the UNO, and you should be on your way.
